“Poltavskaya” groats are made from hard wheat varieties. In addition to starch, they contain other carbohydrates, the amount of which ranges from 50–70%. Pearl barley is a groat made from whole barley grain. The grain is first cleaned and polished. After processing, barley resembles river pearls, which is where the name comes from (“pearl,” i.e. pearl).
